清蒸鳕鱼 | Steamed Cod Fish .
材料: .
鳕鱼400g
绍兴酒 少许
姜片 3片
蒜末 3汤匙
青葱 2条
姜丝 30g
红辣椒丝 少许 滚油 2汤匙
头抽酱油 3汤匙
鸡汤 2汤匙 .
做法: .
1.预备酱汁: 把头抽酱油,鸡汤混合均匀备用。
2.把葱,切成丝泡在水里,备用。
3.把蒜末,炸成炸蒜备用。
4.把姜丝炒至金黄,备用。
5.蒸锅开大火,等水滚。
6.要确保鳕鱼的麟有刮干净,印干。
7.在鳕鱼上,,淋一点米酒去腥。
8.水滚后,把铁盘放进蒸锅里,放3片姜,把鳕鱼放上去,关盖蒸7分钟。
9.蒸大概3分钟半的时候,开盖去死气。
10.鳕鱼蒸好后,把它移到另外一个盘子,蒸鱼渗出的水不要。
11.将炸蒜,炸姜丝,葱丝铺在鳕鱼上。
12.烧滚油,把滚油淋在鳕鱼上。
13.调好的酱汁,也放进锅里热一热,淋上鳕鱼。
14.家一点辣椒丝在上面让颜色更好看。

Cod Fish 400g
Shao Xing Wine A little bit
Ginger Slices 3 PCs
Minced Garlic 3 Tbsp
Scallion 2 Brunch
Shredded Ginger 30g
Shredded Chili A little bit
Boiling Oil 2 Tbsp
First Draw Soy Sauce 3 Tbsp
Chicken Stock 2 Tbsp . .
 
Steps : 1.Mix First draw soy sauce & chicken stock well, set aside.
2.Shred scallion and soak it into cold water, set aside.
3.Fry minced garlic, set aside.
4.Fry shredded ginger to golden brown, set aside.
5.Bring a pot of water to boil.
6.Make sure cod fish scale is removed, tap cod fish to dry.
7.Add some Shao Xing wine to cod fish.
8.When the pot of water is boil, put in a plate with 3 slices of ginger on it, put cod fish on top, cap it and steam for 7 minutes.
9.When it’s steam for about 3.5 minutes, open the cap to release the steam & cap it back immediately.
10.When the fish is ready, carefully remove the plate from the steamer and pour off any accumulated liquid.
11. Add fried minced garlic, shredded ginger, shredded scallion.
12.Pour boiling oil on top.
13.Heat the soy sauce mixture we made earlier, and pour on it.
14.Add some shredded chilies for garnishing. . . Happy Cooking !
